Apple Porridge Bars
Makes approximately 12 bars
200g porridge oats (gluten if preferred), 260ml unsweetened almond milk, 25g raisins, 200g plain yoghurt, 1tsp coconut oil, 3 eggs, 1 tbsp honey, 11/2 tsps ground cinnamon, 1 tsp vanilla extract, 1 tsp ground ginger, 1 tsp baking powder, 2 Bramley apples, peeled, cored and chopped into small pieces.
Preheat the oven to 170c/325F.
Line the base of a baking tin with parchment.
Place all the ingredients in a large bowl and mix thoroughly to combine.
Pour the mixture into the baking tin
Bake for 45 minutes, or until the centre of the mixture is firm to touch.Leave to cool in the tin for 5 minutes, then remove and transfer to a a wire rack to cool.
Slice into 12 pieces.
Once cooled store in an airtight container and refrigerate for up to 3 days.
