Apple Porridge Bars

Makes approximately 12 bars

Ingredients needed
200g porridge oats (gluten if preferred), 260ml unsweetened almond milk, 25g raisins, 200g plain yoghurt, 1tsp coconut oil, 3 eggs, 1 tbsp honey, 11/2 tsps ground cinnamon, 1 tsp vanilla extract, 1 tsp ground ginger, 1 tsp baking powder, 2 Bramley apples, peeled, cored and chopped into small pieces.
Preheat the oven to 170c/325F.

Line the base of a baking tin with parchment.

Place all the ingredients in a large bowl and mix thoroughly to combine.

Pour the mixture into the baking tin

Bake for 45 minutes, or until the centre of the mixture is firm to touch.img_4897Leave to cool in the tin for 5 minutes, then remove and transfer to a a wire rack to cool.

Slice into 12 pieces.

Once cooled store in an airtight container and refrigerate for up to 3 days.
