Simple, Quick and Easy Melon Dishes.
Prawn and Melon Salad Number 1
Ideal for a family dish, or a dish for entertaining, along side a buffet or BBQ
also an ideal salad for packed lunches and picnics.
Chop up and de-seed 1/4 of a Watermelon, 1/2 Gala melon and 1/2 Canteloupe melon, into small bite sized chunks, place in a bowl and add shredded gem lettuce, feta cheese, thinly sliced celery and crumbled/diced feta, carefully toss together with a squeeze of lemon and lime, and ground black pepper to your taste. To serve, sprinkle finely chopped fresh mint and coriander on top.
Prawn and Melon Salad Number 2
Ideal if entertaining at lunch.
Chop a Gala Melon in half and de-seed. Chop the melon into bite sized chunks and put into a bowl, add 1/2 a chopped avocado, a handful of cooked prawns, 1/4 finely chopped red onion, and some cucumber chunks, toss together lightly. Place Spinach leaves around the the edge of the melon and place the melon and prawn mix into the middle, top with crumbled feta.
Prawn and Melon Salad Number 3
Again ideal for picnic’s and packed lunches.
Chop 1/4 de-seeded Honeydew Melon into bitsized chunks and sprinkle over mixed leaves, add cooked prawns, sliced celery, cucumber and top with Pomegranate Seeds.
Chicken and Melon Salad
Ideal for using up left over roast chicken.
Place a handful of roasted chicken into a bowl and mix with pesto. Meanwhile chop a Gala Melon in half and de-seed. Chop the melon into bite sized pieces. Place mixed leaves into the ‘melon bowl’ add the pesto chicken and melon, top with Pomegranate Seeds and ground black pepper to taste.
Watermelon Pizza
Slice a Watermelon with approx .5/..75 inch depth, spread over yogurt of your choice (we chose vanilla), and then choose fresh fruit and place on top of the yogurt and around the watermelon base to form the ‘pizza’ topping, as can be seen we chose kiwi, strawberries, blueberries and blackberries.
a very simple, but effective dish ideal for breakfasts, dessert following a BBQ when entertaining, or a fun way for children to eat their fruit.
