Pork Loin with Apricot Salsa
2 Whole Apricots, chopped
½ Fresh Lime, juiced
1 Whole Medium Tomato, finely chopped
1/2 Red Onion, finely chopped
1 Red Chilli, finely chopped
2 Tablespoons Coriander finely chopped
Finely chop the tomato, onion, chilli, and coriander.
Combine in a medium sized bowl.
Add the lime juice, and stir until mixed.
Chop the apricots, remove and discard the stone, and add to the mixture. Stir well and season to taste. Cover and refrigerate until needed (will last for 24 hours).
In the mean time either BBQ, griddle, pan fry or oven bake pork loin steaks or pork chops. When cooked plate up with side salad and Apricot Salsa.
