Spinach with Garlic Mushrooms and Walnut

Serve as a warm or cold salad, ideal for BBQ’s or with Roast chicken or steak.

Wash your hands before handling food! Finely chop or crush 2x cloves of garlic and gently fry in a drizzle of olive oil (be careful not to burn the garlic), in the meantime boil the kettle. Once the garlic is soft add 5x thinly sliced mushrooms and sauté until soft and browned. Meanwhile place 5 handfuls of fresh spinach in a colander and place over the sink, carefully and gently, pour over the  boiled water until the spinach wilts. Once the spinach is cooled, squeeze out any excess water, and place on a serving plate/dish. Top with the mushroom and garlic mix and top with crushed walnuts.


This dish works perfectly sautéing the mushrooms in thyme too, and adding feta instead of the walnuts, or how about adding green pesto to the mushroom mixture and topping with pine nuts.
